Baked Feta Salmon

This is a delicious easy lunch or dinner recipe, and is one of my go to’s when I want something quick and satisfying. It goes great with quinoa or rice and a fresh salad!

Makes: 2 portions

Takes: 25-30 minutes

Ingredients

2 salmon fillets

2 tbsps feta

4 cherry tomatoes sliced

Small handful of fresh basil leaves

Pinch of cracked black pepper

1/2 tsp lemon juice

Drizzle of olive oil

You will need

An oven

A baking tray

Chopping board and knife

Spare bowl and fork

Method:

1. Pre heat oven to 200C.

2. Line baking tray with enough lining to wrap/cover your salmon fillets – set aside.

3. In a bowl combine feta, lemon juice and black pepper, press the feta with the back of a fork to combine.

4. Drizzle baking tray with olive oil to prevent sticking and place salmon fillets on top.

5. Spread the feta mix evenly across the top of your salmon fillets, top with fresh basil leaves and tomato slices.

6. Wrap/cover your salmon and place into the oven.

7. Cook for 20-25 minutes, until cooked through*.

*If salmon is frozen it will take longer to cook through.
