Smoky Butternut Squash

This is a yummy nutritious vegetable that works great as a side, enjoy throughout the week adding into salads and veggie stir fries!

Time: 1 hour

Ingredients

1 butternut squash chopped

2 tsps olive oil

2 tsps sweet smoked paprika

Pinch of cracked black pepper

You will need

An oven

Lined baking tray

Large Bowl

Method

1. Pre-heat oven to 220C.

2. Chop butternut squash into chunks.

3. In a bowl mix the squash with the olive oil and spices ensuring the squash is evenly coated.

4. Add the squash to the lined baking tray and into the oven.

5. Cook for 40-50 minutes, until cooked through and soft, turn over occasionally throughout cooking.
