Lemon & Basil Salmon

This is a super easy and delicious way to cook up your salmon. Great served with rice or quinoa and salad or veggies!

Makes: 2

Ingredients

2 salmon fillets (uncooked)

2 tsps lemon juice (10ml)

1/2 tsp dried basil

Pinch of cracked black pepper

Drizzle of olive oil

You will need

An oven

A lined baking tray

Method

1. Pre-heat oven to 200C.

2. Line baking tray with enough lining (e.g. kitchen foil) to be able to wrap and fully cover your salmon.

3. Drizzle your olive oil over your baking tray to prevent any sticking.

4. Place the salmon skin side down onto your baking tray.

5. Make a couple of incisions across the top of your salmon fillets with a knife.

6. Pour the lemon juice, basil and pepper evenly across the top of the salmon and rub in with the back of a spoon, so the fillets are evenly covered.

7. Wrap your salmon with the lining ensuring it is fully covered and place in the oven.

8. Bake for 20 minutes or until cooked through.
